5-Ingredient Magical No Bake Brownies

There are many reasons why I’m calling these magical no bake brownies. The recipe magically comes together in 5 minutes, with just 5 ingredients. The brownies magically disappear from the fridge after a day. And even more magical is the fact that they were invented by one of our Instagram followers!

These raw brownies were created just for this blog by Cynthianne. I just can’t get over how delicious they are. You’ll only need 5 simple ingredients that you probably have in your cupboard already to make these. And they’re gluten free, dairy free, refined sugar free and completely clean. 

These healthy vegan brownies are absolutely perfect for summer. I don’t know about you, but I don’t particularly enjoy switching on my oven in summer. With the temperatures crawling up and the heat kicking in, I just love an easy no bake dessert. Who needs baked brownies anyway when you can sink your teeth into these fudgy, nutty and dense chocolatey treats?

How to make Healthy Brownies 

The best thing about these no bake brownies is that you need something like 5 minutes to make them! They’re absolutely perfect for those days when you’re craving a healthy dessert and you need it FAST! All you need is; almonds, coconut, raw cacao powder, medjool dates and vanilla extract and a sprinkle of salt. That’s it! 

You just chuck all the ingredients into your food processor, press them into a dish and voila. I told you, they’re magical. 

I’m sure some of you might be thinking about whether you can use normal cocoa powder. The answer to that is Yes, The result will still be 100% delicious. The difference between the two is that raw cacao is made by pressing the unroasted cacao bean coming from the theobroma tree. On the other hand, cocoa is made by roasting the beans at high temperatures. 

Another question some of you may have is whether you can replace the Medjool dates with the normal kind (deglet noor). Normal dates have a thicker flesh and are firmer in texture, whereas Medjool dates have a stickier, more caramel like consistency. Medjool dates are also more ripe so they’re sweeter.

The recipe definitely tastes better with Medjool dates since they’re both stickier and sweeter. Nevertheless, it can still work with the normal type. Just make sure they’re pitted. 

 Dates are one of my favorite sugar substitutions. You’ll hardly find any healthy dessert recipes that don’t call for dates on this blog. These sweet guys or chock full of fibre and also provide you with potassium, magnesium and zinc.  The difference between medjool dates and normal dates lies in the texture. 

How to store No Bake Brownies 

If you can actually resist the temptation of eating the whole batch in one go, you can store your healthy brownies in the fridge for a few days. You can also make a large batch and store them in the freezer. They will hold for a couple of months. This recipe makes 12 servings. If you need to adjust the servings, just click the orange number under ‘servings’ and use the slider to adjust the quantity. The ingredient quantities will change on their own accordingly. 

I love freezer friendly desserts. It’s May and I’m still snacking on Kwarezimal that I baked 2 months ago!

These no bake brownies are the perfect quick and easy dessert for warm summer days. They’re fudgy and chocolatey yet healthy, dairy free and gluten free.

Equipment

  • Food Processor
  • Small Glass Dish

Ingredients
  

  • 100 g Raw Almonds you can also use walnuts or pecans
  • 30 g Unsweetened Shredded Coconut
  • 35 g Raw Cacao Powder or unsweetened cocoa powder
  • 235 g Medjool Dates pitted and chopped
  • 1 tsp Vanilla Extract
  • pinch Himalayan Salt

Instructions
 

  • Combine almonds, coconut and raw cocoa powder in a food processor and process until almonds are chopped to a fairly fine consistency. Remove mixture and set aside.
  • Add dates to the food processor and process until dates turn into a paste.
  • Add in the almond, coconut and raw cocoa powder mixture along with the remaining vanilla and salt. Pulse until just combined.
  • Line a loaf pan with parchment paper and place mixture in it.
  • Place the brownies in the fridge for at least 30 minutes or so to harden a bit before cutting.
  • Cut into 12 squares.
