These no bake brownies are the perfect quick and easy dessert for warm summer days. They’re fudgy and chocolatey yet healthy, dairy free and gluten free.

- 100 g Raw Almonds you can also use walnuts or pecans
- 30 g Unsweetened Shredded Coconut
- 35 g Raw Cacao Powder or unsweetened cocoa powder
- 235 g Medjool Dates pitted and chopped
- 1 tsp Vanilla Extract
- pinch Himalayan Salt
Combine almonds, coconut and raw cocoa powder in a food processor and process until almonds are chopped to a fairly fine consistency. Remove mixture and set aside.
Add dates to the food processor and process until dates turn into a paste.
Add in the almond, coconut and raw cocoa powder mixture along with the remaining vanilla and salt. Pulse until just combined.
Line a loaf pan with parchment paper and place mixture in it.
Place the brownies in the fridge for at least 30 minutes or so to harden a bit before cutting.
Cut into 12 squares.
